The Ultimate Bacon & Blue Burger

Fire up the grill and make this ultra flavorful burger! Topped with crispy smoked bacon, caramelized onions, and The Indigo Bunting, and finished with tomato fennel jam on a toasted bun, it's a mouthwatering combination of savory and sweet. We served ours with oven fries and a simple vinegary slaw.

makes 4 servings

What You’ll Need:

  • 1 yellow onion, sliced into half moons

  • 1 tablespoon olive oil or butter

  • Salt to taste

  • 4 grass fed beef patties

  • 4 burger buns

  • Spring greens

  • Bacon

  • The Indigo Bunting

  • Ouince & Apple Tomato Fennel Jam

Directions:

  1. Begin by caramelizing the onion. Add the half moons to a pan with olive oil or butter and a pinch of salt. Sauté over medium to medium-low for approximately 30-40 minutes, stirring occasionally, until the onions are tender and golden brown.

  2. As the onions slowly caramelize, begin to cook the bacon to your desired doneness using your desired cooking method. We make ours in the oven!

  3. When the onions are nearly finished, grill or fry the burger patties and toast the buns. Assemble your burger with tomato fennel jam on both sides of the toasted bun, and top with spring greens, bacon, and a generous crumble of The Indigo Bunting. Enjoy!
